Origin and history:

Aubergines originate from the tropical regions of Asia and have been grown for thousands of years for their versatile fruit. The Zaraza variety was developed at the Vegetable Research and Development Station (V.R.D.S.) in Buzau, Romania, and was created specifically for excellent productivity and superior fruit quality under open-field conditions .

Botanical characteristics:

Zaraza aubergines are annual herbaceous plants forming compact, well-branched bushes 70-90 cm tall. The fruits are large, with an average weight of 350 g, oval and deep purple with an intense sheen, and have white, firm flesh with no bitter taste. The Zaraza variety is valued for its thin skin and pleasant texture.

Growing conditions:

Zaraza aubergines prefer fertile, well-drained soils with a neutral to slightly acid pH. They are grown in sunny locations at temperatures above 20°C. Sowing takes place in spring under protected cultivation for seedling production, and transplanting into the field is carried out once the risk of frost has passed (May-June).

Care and maintenance:

This variety requires regular watering and the fertilisation of the soil with organic or mineral fertilisers rich in potassium and phosphorus. During the growing period, weeding and mulching of the soil are recommended in order to retain moisture. Zaraza aubergines are notable for their good resistance to pests and diseases, although constant monitoring of the crop is beneficial.

Propagation:

Zaraza aubergines are propagated from seed, sown in seedbeds at temperatures of 22-25°C. Germination takes 7 to 14 days, and the seedlings can be planted out in the field at a spacing of 50-60 cm between plants, ensuring sufficient room for development.

Uses

Zaraza aubergines are extremely versatile in the kitchen and are used to prepare aubergine salad, moussaka, ratatouille and other traditional and international dishes. Their pleasant taste and fine texture make them ideal for grilling, baking or frying. They are also an excellent source of fibre and antioxidants, contributing to a healthy diet.
