Project objectives
Compliance with the food safety requirements laid down by the legislation in force, in order to improve the quality of vegetable produce and the sanitary conditions of production; an increase in income within the farm’s sector of activity through the diversification of marketing options; and a reduction in production costs by optimising technological processes and making them more efficient.
Results
- Development of specific techniques and methods for storing and processing the produce obtained on vegetable farms;
- Identification of the species and varieties best suited to dehydration;
- Production of plant material suitable for drying and dehydration processes;
- Determination of the morphological and biochemical characteristics that make produce suitable for drying and for preservation by dehydration;
- Establishment of demonstration plots for the following species: onion, carrot and celeriac;
- Conduct of field experiments, collection of data and statistical analysis in order to establish the behaviour of the three species under drying, dehydration, stocking and storage conditions.
- Organisation of two round tables to promote the vegetable farm model in areas with potential for practical application;
- Production and distribution of an information leaflet on the results and technological recommendations.
- Publication of two articles in specialist journals;
- Participation in two scientific symposia, at which the results of the research carried out were presented.
